A Walk on the Wild Side

It has been raining all day.

Didn’t keep D and me from going out for a walk! First we went to Carnlough to the Cranny Falls. The waterfall was quite spectacular as it had been raining hard. My little sister should remember the area as we went camping there a number of years ago. Well, I guess we didn’t really mean to camp there. We just couldn’t find the people we were meant to be meeting. I recall HB thinking she could hear someone playing The Prodigy in the hills and off we went following the noise. Turned out it was the sound of a marching band in nearby Carnlough.

Back in the car D and I attempted to dry off before going for another little walk in Glenarm Forest.

We saw plenty of flora and fauna. I wish I knew more about the plants and animals I see on our trips. I find myself pointing out birds to D and calling them either ‘big bird’ or ‘wee bird’ - hardly an expert! But, at least I can identify a heron, unlike D who squealed ‘Oh look a pterodactyl!’

At the moment wild garlic is covering the floors of the forest. It is edible and I am going to try it sometime. I did try bringing some home with me but it wilted very quickly and then it spent a week in the fridge (like that was going to bring it back to life!), then it got chucked in the bin.

This morning whilst looking for a recipe for sticky toffee pudding I discovered that Hugh F-W is releasing a limited edition book on wild foods called A Cook on the Wild Side. I was so excited that I ordered it immediately.

This is the recipe I used. I altered a few things - I used instant coffee powder instead of essence. I got my copy of the recipe from a magazine and thought that 200ml of whiskey seemed far too much and thought it was a typo, so I only added 50ml. Even at 50ml it seemed a little strong. Perhaps leave it out or only use 20ml. Bushmills whiskey is the best - not that I am suggesting that a woman in Miss E’s delicate condition should be drinking whiskey! Also, I baked it in a square brownie pan rather than in individual moulds (for about 45 minutes).
