Chili Con Carne Oaxaqueno
Another batch of chili has been made. This is one of our staples and it is very unusual for us not to have a couple of portions in the freezer. For a few weeks our freezer has been bare! Horror!
The recipe is from ‘Two Cooks and a Suitcase’. It really is very tasty and is made with pork pieces and chorizo rather than mince.
It has been a bit of a foodie week. We called out at my Mum’s last Sunday and left with a load of homegrown veg.
On Monday we used the chard we got in a feta and chard puff pastry pie. The recipe is usually made with Spinach and came to me from my Kerry aunt, who had got it from my Leitrim Aunt.
On Tuesday we used the courgettes we got in a courgette pasta sauce, from a Hugh Fearnley Whittingstall recipe. It involved cooking the courgettes until they turned to mush and adding parmesan and a little cream.
On Wednesday we had fresh peas in a stir-fry.
On Thursday we had the rest of the peas with fried egg and chips. Mmmmm!
I cannot remember what I ate on Friday.
Yesterday, we used the apples we got in a apple upside down cake. We shall be eating some more of that later. Yummy with ice cream.

We had Tacos made with Chipotle Chili, Sun Dried tomatoes, fresh tomatoes, pumpkin seeds, capsicum, garlic and a few other ingredients. You liked it a lot!!

You will be pleased to hear Dave that I’m going through a process of hardening myself to spice. I’m liking yellow curry a lot and green curry a bit. I’m having my Phad Thai spicier and I’m experimenting with strange chicken dishes from the school canteen. Also I had enchiladas at the mexican restaurant a couple weeks ago. Hmmm delicious but I was kinda staring longingly at Keara’s fajitas which looked amazing.

It may have been hot when I was on holiday but the Cretans don’t do spicy food. Funny how I only realised I missed it when I got home.
The chard and feta pie sounds brilliant.
