Recipes of Distinction
I love food, there is very little doubt about that. Both eating and cooking, though mainly eating. Recently I have tried a few new recipes which are sure to become favourites -
The first is a Spinach Quiche and it is truly delicious, who could not love the combination of pastry, cream cheese, eggs and spinach?
The second is a Coconut Bread and it is so yummy. I am a bit of a sucker for coconut. This bread should really be called less-sweet coconut cake that you can eat any time of the day and not seem like a complete piggly-wiggly because it’s a ‘bread’ and not a ‘cake’. Delicious toasted with (homemade) damson jam on top.
Ice creams of distinction have been Apple and Blackberry ice cream and Coconut ice cream. Sadly, blackberries are now gone and I have none in my freezer. Boo hoo!

I had apple and blackberry crumble with apple and blackberry icecream in the Blackstone recently……delicious! I could have taken their supply of ice cream home, if they would have let me.

I had that dessert, also recently. The ice cream was nice, totally different to this blackberry and apple ice cream. The Blackstone’s ice cream was jammy, while this ice cream is very fruity.

That coconut bread looks good but how do you translate the recipe? What are ‘cups’?

Do you not have a measuring jug with cups marked on it? If not there are plenty of websites offering conversions, it is well worth the effort.

Not only do I have a measuring jug I actually have cups - Nigella ones to be precise. Coconut bread baked and mostly eaten - have not tried toasting it yet.

Well I gave half of it away to traybake and I am using up the remainder - toasted for breakfast two mornings in a row.
